Okay people, here's a really easy one. It skips the tempering step. I strain mine after I've combined the first 5 ingredients and before cooking.
Coconut Meringue Pie
Preheat oven to 325 degrees
Filling
4 Tbls. granulated sugar (more if desired)
5 Tbls. all purpose flour
1/4 tsp. salt
2 Cups milk
3 egg yolks, slightly beaten
1 Cup shredded coconut
2 tsp. vanilla extract (I always use
extract not flavoring)
1 baked 9" pie shell
Meringue
2 egg whites(I use all three and 1 or 2 more Tbls. sugar)
4 Tbls. granulated sugar
1/2 Cup shredded coconut
Filling: Combine sugar, flour and salt and add milk and egg yolks, mixing thoroughly(I strain it into the pan). Cook until thickened , stirring often. Remove from heat. Add the 1 cup coconut and vanilla extract. Cool slightly, then turn into pie shell.
Meringue: Beat egg whites until foamy throughout. Add sugar, 2 Tablespoons at a time, beating after each addition until sugar is blended. Then continue beating until mixture will stand in peaks(no longer as it will dry the whites out) Pile lightly on filling; sprinkle with the 1/2 cup coconut.
Bake @ 325 degrees F for 15 min. or until lightly browned
