You have to cut through the ribs to remove the breast completely. I use poultry shears for this. Ribs run around the body like human's do. From Left : Yellowy thing is the Gizzard and red shiny thing is the liver

Red lung tissue. It's shaped around the ribs you see underneath it. Red tissue at the bottom of the photo is Kidney tissue. They sit alongside the spinal column. These seem enlarged to me, but I'm not 100% sure on that.
