I've got a rooster now, he didn't grow up with the dog, so when she (my dog is a she!) comes running, he starts screaming to warn the ladies and they watch him like he's an idiot. he is still young and hens tolerate him, but they don't have a high opinion of him!
I guess with a german shepherd is a little easier: she's really cooperative, but she also has a high prey drive and first times she saw chickens she was desperate to chase them.
First times I used a leash (after loooong walks, so she was tired and less excitable) to take her in the yard with them. I praised her when she was quiet and took her away when she was getting too excited... I did this many times since she seemed quiet around them, then I let her in without the leash and I guess that's all, I didn't do much, now she can stay with them and she acts as they didn't exist.
