Cut skin and tendons at the joint to remove the leg and skin on that side.
Bend this joint hard until you hear the tendons and cartilage give way, cut the bone and skin loose here.
Then pull skin on the side upwards and over the "shoulder" of the bird and down to the "elbow".
Like so. Then do the same to other side.

Grasp both sides of the skin from the side cuts and pull hard, then pull the skin on down the legs, just like the leg of a pair of pants.
Cut along the side, on both sides, a little ways.
Opening of the front of the skin. Cutting upwards from the first cut a little bit, then grasp both side of skin and give a hard pull apart...this should just open the skin all the way to the throat.
