I believe this is the duodenum. It was quite stiff and hard.
See how tightly wound the intestines are. They are hard instead of soft like a healthy intestine. Not at all flexible. Notice too, the little dots or lesions or whatever they're called... absolutely everywhere.

Liver color is good. Bird has a little fat, probably was living off of it for a while as she wasn't eating much and was not laying.
