Then pull skin on the side upwards and over the "shoulder" of the bird and down to the "elbow".

Grasp entire skin and pull up and off the neck, sever the neck below the head....
Bend this joint hard until you hear the tendons and cartilage give way, cut the bone and skin loose here.
Then pull skin on the side upwards and over the "shoulder" of the bird and down to the "elbow".
Like so. Then do the same to other side.
Cut skin and tendons at the joint to remove the leg and skin on that side.
Grasp both sides of the skin from the side cuts and pull hard, then pull the skin on down the legs, just like the leg of a pair of pants.
