fuzzi I bake weekly ....I purchase large bag of yeast from Amazon....
put it in a glass Jar....store in the Freezer. When I bake no need remove from freezer.....remove and add when you bake.
Bread rises EVERY TIME....YEAST STORED IN FREEZER Seems
like forever.....Never failed. Not a few...

It is more Work...keeping the Sourdough Strong...But well
worth it. Best for digestion and makes a difference in the
taste. Ron mailed me the SDS and I have been baking Sourdough since September 2016.
