Take the pupa and feed them to the chickens. The beetles are also edible, but I believe they don't taste as good. Please don't release them, I'm not sure where you're located but it's never a good idea to release non native insects where they don't belong.
I think the 3rd suspected cockerel is indeed a cockerel. 3 or even just 2 roos with this flock likely wouldn't work in the long term. They would fight over the girls. I'd only keep one with that small of a flock.
To end my hens broody-ness I lock them out of the coop during the day because I don't have anything to put a single hen into really. Keeping them out of where they want to nest for a few days seems to do the trick!
