Winter light will get you eggs, when they would normally not be laying. But, chickens will only lay so many eggs, over a lifetime. You can have eggs through the winter, but your hens will not lay for as many years, as they normally would. That means you'll have non-productive hens to "deal"...
Your chickens are getting excellent treats! My chickens get whatever is left over and we don't eat. Everything from Mexican, to unknown substances. They have eaten Styrofoam ice chests, so, I no longer worry about what they eat.

Sorry to hear about your girl. I haven't repaired any broken wings, but did splint a couple of broken legs. They heal quite fast and are pretty durable birds. I'm sure you could wrap her wing and bind it to her, I'm just not informed enough on the proper procedure for you to get it right...
My broodies usually go in a chicken tractor. The other hens free range around the tractors, so, they all "keep in touch". I haven't had to resort to the kennel, but it seems like a good solution, when coop availability is limited.
When I toss a broody off her nest, the other hens sometimes pick on her until she blends in with the flock again. When she gets off the nest with new chicks, its a different story. New mothers are hell on wheels and will take on all comers.

6 weeks a little young. If your coop had four sides, they might be ok. They aren't fully feathered yet and not really prepared to face wind and weather. Usually, by 8 weeks they have full feathering and do just fine in the temperatures you are having. I'd reconsider moving them to a partially...

25~30 should be no problem. I've got a couple hens that would rather roost in the run and it's been in the teens at night for the past three weeks. Could she be getting ready to lay? Timing isn't that far off, for an early layer. Other than that, I don't know what else to suggest.
When we first started selling, yes, we did give a note with information about washing, the "bloom" and other trivia. Everyone we sell to now is a repeat customer and there is more of a demand for egg orders than we can fill. Your customers will most likely be regulars, so, I doubt you'll need...
