    You'd end up with a mutt chicken. California whites are crossbred to begin with. Nothing wrong with mutt chickens, but hatching energy should be invested toward heritage chickens imo.

    Sometimes an outcross is needed. Depends on the genetics. 16 brown leghorn or 16 white houdan? One would benefit from an outcross more than the other. Also vigor should be a consideration. Closed flocks make sense, but new blood also makes sense.

    All chicken breeds will go extinct without human intervention. With that said, all of the breeds that breed true are in danger. Fads only last so long.

    I usually 'rest" my turkey's for around 48 hours. I do not brine a turkey any longer than 24 hours. I don't see a problem resting a turkey that long provided it stays under 40*F. I would not brine it that long though. Poultry tends to get salty in a brine longer than 24hrs.

    6 weeks is fine. The few I have done over the years I've culled around 6 weeks. I like a 3-3.5lb carcass. I think they are just teh right size for the type of cooking I like to do.

    For BB turkey's it's usually 16-20 weeks. They usually dress out at 75%-80% of live weight. So 25lb live weight for 20lb carcass at 80%. You'll have different weights within a flock. Some will be lighter and some heavier. So it's best to weight them. A hang scale and a feed bag works well.
