One thing I've learned over the years is that any breed of chicken can have that odd broody hen. I've even seen Leghorns go broody and hatch chicks and raise them with that protective instinct.
Personally, I think it just a tidbit cruel to not let them out sometime. I let mine out everyday if not raining late in the evening but I sit there and watch them. They seem much happier when I let them out. The key is to watch them when they're out.
Went to the TSC in Waldorf, Maryland yesterday 2/25/13 and they had "Buff Brahmas". I stood there for a long time just looking and talking to whomever, very enjoyable. I'll visit every week same as last year. I went so often the people that work there just smile when they see me.....
Turkens I know for sure will go broody. I've also seen quite a few Red Stars go broody as well but on average they do not. It's possible for any breed considered non-broody to have that rare broody. I've also seen Leghorns go broody and hatch chicks althrough extremely rare.
