If it's just day 18, they they probably will not hatch...but as you get closer to day 21 the chirping will get louder and you will be able to hear them working on getting out of the shell.

He's to old to be handled by a young teen who wants to be involved in the 4H.
A much smaller and YOUNGER steer is what you want to begin with.
He's dangerous, expecially if he's not be handled much since a calf!.

Nothing wrong with the structure at all.
The only thing I'd consider changing is the location of the nest and the roosting poles.
Chickens like to roost as high as possible so that may intice them to your nest boxes instead of the roosting poles.
I'd move the nest boxes away from the roosting...

I think most people have a sense of security for their fowl when their coop is visible to them and some have it that way simply because they enjoy watching their birds while doing things at the window.

From what I see of the coop, it looks like it's all enclosed? There is no window in the back for a light source is there?
The lack of light might be a problem for the girls, because chickens do not see well in the dark and they will avoid going into very dark places. I'd consider cutting a hole...
