I'd going to say the 50% humidity will work fine and congratulations! If you can get it a little higher that would be even better as long as you do not go past 65%. Best of luck.
My guess is you are correct. The larger combed one represents a young cockerel and the smaller one is your pullet. As far as breed I'm going with New Hampshire Red.
