My preferred method is to let sit for three days in brine, right after you process it. Then replace the brine with new brine and freeze. While it is defrosting, it will resoak in the brine again, the result is a very tender bird!

You have to have a special mentality to work in corrections, detention.
I've been a Detention Officer for about 14 months, and its a different ball game from corrections, but you do have to change your whole way of thinking. Just make sure that you are consistent, follow the SOP to the letter...

Look around your yellow pages for butcher shops, or processing shops. Check out your local craigslist, or see if your local feed store knows of anyone.
