I did and it works great however I realize now when it shuts the power off its shutting down the timer too .. but I'm going to let it run and see how it works on this batch.....
There is another option I'm working on also which involves retrofitting the incubator itself.

I found this little switch on amazon, it's awesome... Basically you set a high and low temperature and it turns the incubator on and off using those two set points.
I set one low at 99.5 and one high at 99.7 and it keeps the incubator at 99.6...
