I don't even attempt to sex them till they're older. I've read though that you may be able to tell by looking at the size of the snoods. If they are larger, they are males. But not sure how true that is. I haven't tried.
As far as the protein, I feed my heritage turkeys about 26 %.
Honestly, I'm not quite sure exactly of how to answer this. As long as we've been raising turkeys, we never had our toms try to sit on a nest. But for most of those years, ours have been free-range and have their nests all over the farm.
How old is your tom? If he's young, he could be breaking...

I ordered turkey poults from a breeder in my state. They were shipped Tuesday morning and arrived yesterday morning. They were all alive upon arrival. However as soon as I got home, two started looking bad. By late afternoon, they both died. Overnight, two more died. Then another died just now...
