It sounds like your pens are similar to what I built.
I used 1/2" x 1" wire for the floors though. It's heavier guage and seems to be pretty comfortable for them. I would worry about 3/4" square allowing feet to slip through. but I don't have any to test on my birds for you.

My quail have been laying for about two weeks now. The earliest ones started at 5.5 weeks old. Egg size has been increasing through the week and more of the birds (there are twelve females, in three groups of four) are laying now.

You can try to find soybean meal or hulls (feed mill may have it). I've seen mealworms/darkling beetles doing quite well in spills of straight up soymeal...might work in a bin too.
