Pharoah (wild/brown) also have white meat (breasts). The A&M whites have white thigh meat, whereas the other wild type have "chicken wing" type dark meat. But with the size of quail legs, it's not much of a culinary concern.

Quail can become aggressive when they are in the mating mode. I notice that when I turn up the light cycle to get somew inter hatching eggs, the boys get excited and the girls get defensive. Springtime and in love makes for crazy emotions.
It's good to give your quail at least some of the winter off from laying. It's stressful to have to make eggs 24/7/365... they need a break. If you want eggs, consider moving a layer cage to an area with controlled lighting (14hrs/day), and rotating this birds out every
month.
Be careful putting a salve or ointment on large cuts that may end up collecting coop dust and other gunk in the gel after the medicine wears off. Isolate and keep the afflicted in a clean warm cage

My jumbo whites are Huge. I notice that the hens are larger and appear more rounded whereas the roos are "taller", more road-runner like (probably from "craning" their neck to look around more as they are more interested in the outside of the cage world).
