Roosts can be anything. Your run looks lovely, maybe you could build something that would blend in using tree branches and/or logs? Elevated, horizontal 2x2's make good roosts, and the lumber is inexpensive.
If you cut the bird apart at the joints, carefully, you won't have sharp bits to poke holes. Try to avoid breaking bones. Also, don't leave the bag in the water for as long. This is what works for me when I bag rabbits. Try to layer the pieces so any sharper bits aren't next to the plastic.
I was planning on letting my CSA people pick their breed of turkey. I figure I'll get a nice assortment that way, and the next year I'll know which breed I like best. They can visit their turkey if they come out for a farm tour.
