I am by no means an expert on egg laying behaviors and sicknesses involving eggs. I have gotten a few eggs like that before, and, oddly enough, they usually come in the winter. I once even got an egg with no shell (in the winter, again)! I'm happy to report that I've never lost any chickens over...
That's hilarious! Once, my Polish hen layed in a feed bag. I didn't know it until I was scooping some food out and got a few eggs in the cup.

I think it all depends on the individual chicks. I have bred my Golden Laced Polish with my black EE and gotten two different results. One chick I hatched last year and she looks like this: This year I hatched another with the same parents. The result was quite different:
