My experience is they are not that big. I do breed to the standards.
The standards for a midget white should be 13.8 for a tom and 8.2 for a hen. See page 16 from the ALBC...

Some of my favorite Thanksgivings we took our turkey and grill to the lake and cooked it there. I met alot of others at the lake that where gilling other meats and side dishes. I think we where the only turkey. We all shared and reminded me of the first Thanksgiving.
There is less than a $1 difference in Turkey starter (28%) and grower (20%) here. I just keep them on starter because in the long run it is cheaper.

You can buy seed made for wild turkeys. They love clover, alfalfa, peas and chufas. Its very high protein. Do a search for turkey plots, or turkey pasture seed.
