I take the turner out at lock down and I hatch in plastic yellow hatching trays that I picked up cheap online somewhere. You can use egg cartons though.

Chicks mature in just 21 days and things change rapidly each day. Around day 14 it's almost too difficult to see anything.
Ideally the eggs do need to be turned before and during incubation.
