Indian peachicks begin to show distinct differences between the 2 sexes somewhere around 3-5 weeks and beyond. Males (peacocks) will have more barring on their wing shields and backs than the females (peahens) do, if the Indian blue mutation is phenotypically present.

No offense, but are you sure that prairie chickens won't naturally drink from a waterer, like a water bowl? Or peck at the ground to eat (like other game birds)? Honesty matters to me, so I doubt whether that's true of their behavior, though my guesswork tells me they are convergently similar to...
Note that although I don't keep ptarmigans, I do know a breeder up in Idaho who successfully breeds and raises multiple grouse species, and is planning on adding willow ptarmigans to his collection.
