I am buying assorted Standard Cochin chicks from Privett this spring. After they mature I am wanting to sell their offspring at local swaps. What is the best age (considering profit alone) to sell chickens at? Day old chicks? Feathered out chicks? Adult? Somewhere in the middle?

I am wanting to separate my specific chicken breeds. I have chosen to build 4x8 pens framed out of 4x4's and 2x4's to fit into my leanto. They will also be 6' tall and have stucco wire around the cage. Do you think this would be big enough for a breeding trio or quartet of standard chickens?
What hatchery/seller is the best for buying Standard Cochins? I have 3 black cochins and would like to get a few more breeding pairs/trios in silver laced, golden laced, blue, ect.... Any input about hatcheries or the breed itself is much appreciated!
I've gone from 4 chickens to 3 brahmas, 3 polish, 1 mottled houdan, 5 silkies, 4 cochins, 4 rhode islands, 3 barred rocks, 3 chukar, 2 ringnecks, and 7 crossed chicks. Cant wait to see what else i can get!
