The one you think is a tom kind of looks like a tom to me as well.
You don't buy pigeons as chicks. Unflown young birds can be homed to your loft. Older birds and flown birds are homed to his loft. You breed babies out of them that will be homed to your loft.
The average price is 15$ each, I would question the quality of the birds @ 3$.
I would say your white turkey (Probably either a Holland or Beltsville...) is a hen. My male turkeys strut at about 2 months of age... you would have noticed something by now if it was a male.
The vent sexing is what led to my conclusion of a probable pair. Couldn't get anything to "pop" on the "female", and felt no bulge. She is also oh so smaller than the male. I know I have either a pair or two males.

Upkeep as far as...?
As far as care goes, they are a large Chinese... They will not have any of the issues an African could have. They should be very hardy, good foragers, etc. They will be noisier than an African though.
