I've always kept a rooster, until now....but I am growing a few to find the next king:) I'm not great at gathering eggs in a timely manner, neither are the kids. I've used eggs that had been in the coop for at least a week in the texas heat.

My very first hens were hi line browns from a semi free range operation, I locked them in the coop for a few weeks and let them out to totally run loose. They did great and ran to me like dogs. They also guarenteed me 1 egg each a day!
I would add at least 2 more, if you can't eat all the eggs I bet your dog would love an omelet. And it's very easy to find people to supply egg cartons and sell/give eggs away!
If you don't gather eggs for a week your still ok to eat the eggs. It just don't happen that quick, you may have a spot in the yolk. You decide if you like that or not. I've gotten it in store bought eggs also, but if you don't have chickens you don't know. The eggs are still good.
I'm in central Texas and a 110 degree day isn't uncommon. I typically free range but in some cases I have to confine them to the coop. The coop is under some trees and one side is 1/2 open with chicken wire, there is also a large opening on the other side.

If a new roo has qualities I like I keep it otherwise I make chicken and dumplings or fry it up. It's not hard to get over run with birds if you have 1 rooster.
When I intoduced bantys with my larger birds I should have kept them in the coop longer than 2 weeks together. When I turned them out to free range they became 2 separate flocks although they came home at night to the same coop, I did have lots of crossbreeding and was pretty proud of the results.
