1 mistake people make when they hang it in the cold for a day or so,, is not skinning it first,, with the skin on, in 20 degree weather, it could take the deer hours to cool off
i turn everything i possibly can into little steak "bits",, throw some batter on em, and fry em up mmmmmm mmmmm good.
my oldest (6 years old) and me use to have a handful of fried deer EVERY night,, hehe

EDIT: ta say,, ive processed hundreds of deer and have never soaked,,, thats why imma askin
ya man,,, the neck makes a great roast !!,, and DONT YOU DARE turn them backstraps into a roast !!!!!!! make them into steaks,,,, thats the BEST cut of meat on the whole deer.

Good for you!!! I think that must of been kinda hard for the first time. Bambi was dead, and now will feed more than vultures. I'm not sure I could have done it. All the deer I see dead here are well dead.
