For me, I would leave the loose skin/scab alone and let it fall off on it's own.
I think he is healing well and improving. Wounds/damage that extensive will take time but you are doing such a wonderful job. The photos are very good and I very much appreciate your detailed account.
Check his crop to make sure it's empty in the morning before he has had anything to eat/drink.
I would encourage him to eat his normal feed along with some extra protien (egg, fish, meat). If you have him inside, provide him with a source of grit free choice (crushed granite, course sand) so...
