Well, that is true, but even in established breeds there is variance, no bird is identical, some will always fit a written standard more than others... And, happily, unlike many other animals, a generation for a chicken can be less than a year... What's really needed is a strong understanding...
I would go with a Silkie Rooster to the EE hens... They rehome a lot of Silkie roosters, so you can just about always find one. I have some from that cross, they lay green eggs, but you would have to take that hen back to the Silkie to get the Silkie fluff back...
