It was really dang tasty too. :O And a GREAT change of pace from the stuffed squashes/mushrooms we'd done in previous years. And it was pretty well balanced with high protein fillings (mushrooms, green beans and nuts). It was a big hit!
There will be no fancy veg*n dish this year due to COVID-19, unless one of the boys really wants some stuffed squash. :( No gathering. It's pretty heartbreaking but not worth the risk.

Yeah, I think the wellington checks all of the right boxes for that reason.
A bunch of nuts plus mushrooms and green beans which are moderate to high protein levels (for vegetables) should check that nutritional box. Which means it's a dish that - in a meal plan- could replace a slab of meat...
Well... That hasn't been my experience. These ones have expressed a preference and gratitude for it. All the veg*ns I keep close enough to me to attend (which I think between them and the lactose free is maybe 4-5 people, so not a lot but still like 1/5th of the people that show up) are excited...
I have, most of them seem like there's no recipes attached or when I crack them open there's dairy or eggs or something else I can't use. So I was hoping for someone with more direct experience with the suggested food.

Eggs are generally OK since for a lot of people I know it's a moral/welfare issue with animals and with eggs they come from my own chickens they can literally see and hold and acknowledge they have a good life here. And my chickens stick around for up to several years so it's not like one year...

Chickenmomma, those recipes are now super saved to my computer. The processed soy milk might be a problem but I could probably find a substitute.
