I do both
We can a lot of our vegetables, do some pickling and mostly make a basic marinara sauce. I more or less follow the ball canning guidelines on whether to pressure or water bath canning.
I'm pouring through seed catalogs now to plan my 2020 veggies.
Past success - asparagus, sweet potato and tomatoes - especially San Marzano. We're big into canning pasta sauces.
Failures - anything porcupines can get their teeth into.
