Oh, macarons! Almond meringue shells sandwiched with jelly or icing? Those are good -- fun to make, too.

Macaroons are made out of meringue mixed with a lot of shredded coconut, and are then baked at a low temperature to dry the outside.

Little bean-shaped lumps of sugar syrup in a slightly firm shell. I believe that the shell is made by tumbling the centers, which are made in cornstarch molds, with sugar and maybe a bit of syrup.
