When we say "scramble" we mean mix them up. Beat em, whip em. They are still raw. Perfect to eat scrambled or used for baking.

Definitely scramble them before you freeze them. I made the mistake of freezing goose eggs just cracked to get them out of the way. They were gelatinous goo with a leathery yolk that just floated on the top of the batter.:sick.
