you will keep track of them for awhile.. everybody does at first.. after awhile you will be selling or giving eggs away.. or even if you use all of your eggs, you will find that it is not that important to date them.. your fresh eggs stay good for over a month in the refrigerator.. what kind of ink is in a date stamper? I write only the hatch due date on my hatching eggs.. 811 = aug 11 I use only pencil.. do NOT use a sharpie type felt tip pen for marking hatching eggs because it is too toxic and may kill the egg..- jvls1942
