    What are you canning now?

I have tried a few different recipesover the years. Sometimes the trick is to cook the sauce down, which takes a few hours or overnight in a slow cooker, before canning it. (This makes your house smell delicious too.) Another trick I have learned is to just add a can of tomato paste to your jar...

    What are you canning now?

@Beekissed Amazing! You inspire all of us who can to can even more. Our neighbor gave us a deer recently; I ground it up and froze every last bit that I could, but, after reading all of your postings, I may try canning the next one.

Yeah, I know. Does make you kind of suspicious, right? But, the pickles taste delicious.

    What are you canning now?

@rancher hicks My Concord grapes were mostly ripe. There are still a few that are red and green, not purple and they are SOUR! So, I didn't pick them, but there were also some grapes that were starting to dry and shrivel up, so I figured I'd better pick what was ripe while I could rather than...

    What are you canning now?

@shortgrass I used the Mrs. Wages dill packet this year. They turned out delicious. I have used the Ball dill packet before and could take it or leave it. Not impressed. The Ball bread and butter mix is pretty good, but I made my bread and butter pickles from scratch this year because I happened...

    What are you canning now?

Yesterday I canned grape jelly from our own Concord grapes! I only had enough for one batch- seven half pints, but the vines are only two years old and with all the rain I wasn't sure we would get anything. We did though and the jelly is delicious, if I do say so myself! I also canned seven more...

@rides2far I have my husband's grandmother's pressure canner as well. It was made by Steamliner. I bought a new seal for it at Ace hardware a couple of years ago. I have also seen the gauges for sale onlne as well. I have been using it for canning since 2008 without any problems.

    What are you canning now?

@speckledhen Tomato butter is good on biscuits. It is good on rolls and toast too, but I love homemade biscuits. I never could get my husband past the idea of using tomatoes to make a sweet butter, but my Dad and I liked it. Of course, my Mom had made it once when I was a child, and I remembered...

    What are you canning now?

@speckledhen I have started on my pickles now. I have done three batches of bread and butter and two batches of dill so far. I have also canned one batch of green beans. My tomatoes are full of green tomatoes;now I just need them to turn red, purple, or yellow, depending on the variety. I'm...

@Peep_Show Those peaches look SO good! That picture is making my mouth water. We planted a little peach tree two years ago. With all the rain this year, it has nearly doubled in size, but no peaches yet. Some day... We had a peach tree when I was a little girl. I can remember helping my Mom slip...

    What are you canning now?

@rancher hicks Did you try re-making the gooseberry jam yet? There are directions in the boxes of pectin as to how to do it. You can probably look online too. I have had to re-do jams before because of sealing issues or lack of set up on the first batch. The jam/jelly turned out just fine and...

    What are you canning now?

@MistyMountain Mmmm...raspberry pie. I made one a few years ago and one of my sons liked it so much that he requests a raspberry pie every year for his birthday now. Freezer jam is more "fruity" tasting I think. It is less time consuming too since you don't have to cook the fruit down. It is...

    What are you canning now?

@MistyMountain If yoou use the no sugar/low sugar pectin you can use less sugar, no sugar, or an artificial or other natural sweetener. The directions on how to do it are in the box or on the container, depending on which brand you buy.

    What are you canning now?

@speckledhen I canned a bunch of pickles last year and thought we'd never use them all. We did. They've been gone for months now, and I've had to buy some ( which are not as good.) So, this year I planted more cucumbers. The vines are thick and flowering but no cucumbers ...yet. Your pantry of...

@rancher hicks You are making my mouth water...thoughts of homemade biscuits, butter, and gooseberry jam. Are currants easy to grow?

    What are you canning now?

@WYNot Mmmmmm.....cherries in amaretto syrup sounds heavenly. We had to cut down an old sour cherry tree when we moved here. It was bug-infested and was so rotted out it could mostly just be pushed over. But, it was loaded with cherries. I should have made cherry jelly; I made cherry jam and the...

    What are you canning now?

I made applesauce, apple butter, and apple pie filling that year and saved all of the peelings and cores. I then cooked the peels and cores with enough water to cover in a large pot and that made enough juice to make the jelly or syrup and some of the juice we just drank. Then after all the...

    What are you canning now?

@rancher hicks I made apple syrup one year out of a batch of apple jelly that I couldn't get to set. It was delicious. My kids were hoping I'd "mess up" with more jelly so we could have more syrup for pancakes and waffles! I use knee hi pantyhose to strain jelly juice. The mesh is finer than...

    What are you canning now?

@rancher hicks Thank you for the information about cuttings. We bought Concord grapes in 2013. Last year we had a few bunches of grapes. This year we have many, many bunches. They are still green right now. My husband put up welded wire sections for them to climb on and there are clusters...
