    What are you canning now?

Quote: Terri - While looking up Kimnkell's mushroom recipe, I noticed the Ball Book says Caution: Do not can wild mushrooms. I don't know why, but FYI. Better safe than sorry, I guess!

    What are you canning now?

Quote: Those look GREAT! I just checked my Ball Book and it says "prevent them browning" - did you lay them in water with lemon juice? I always buy those little cans of mushrooms to put in gravies, etc., and I notice they almost always are a Product of China or India. I never thought of...

    What are you canning now?

Quote: Try rubbing your hands in pure bleach, rinse well and rinse again with white vinegar. You may have to do that 2 or 3 times, but it worked for me the last time I got into Jalapenos!

    What are you canning now?

Quote: I can't remember NOT canning! I came from a family where Grandma canned everything, but back then everyone did - they had no choice. Back in the 1930's and 40's no one had freezers or big box stores. Even when things were available to buy, Grandma always insisted hers was better...

I finished all my fruit - pears, grapes, red grapes, fruit cocktail and some others. 19 Quarts total. I also did 11 pints of brandied peaches and 5 quarts of pickled peppers. I think I'm done for the year!! It was 42* this morning, so fall is setting in. I do have some tomatoes still out...

    What are you canning now?

Quote: I agree. They are best suited for refridgerator pickles, pickled eggs, etc. They are not actually for canning. You want to water bath your applesauce in quarts - best way to go with that. Good luck!

Quote: Those look beautiful! I want to make some too. I see pears, peaches, grapes, cherries. What else did you use? I was thinking of pineapple too. Do you raw pack or hot? How long did you process those quarts of mixed fruit? Thanks.

    What are you canning now?

Quote: I didn't know you could can them. All I've ever seen are pickled eggs and beets in gallon jars that are refrigerated. They will hold well for a few months like that.

    What are you canning now?

Got 6 quarts and 7 pints of peaches done. Some I brandied and some have rum plus a few with plain syrup. My DH carried them all down to the cellar before I marked the glasses and now I don't know which ones are spiked (and with what) and which care plain!

    What are you canning now?

Quote: My grandmother always made all the fruit schnapps, etc. I'm pretty sure she used sugar in her recipes though. This one doesn't call for any sugar so it may be too strong for me. I made the vodka/blueberries once.

Quote: I just checked my BYC cookbook and I don't see any canning recipes in there. I use some from this thread or the web, but mostly recipes that I learned from my Grandmother way back when I was a teenager (really wish I would have paid attention more then ) or recipes I picked up through...

    What are you canning now?

Quote: Those look beautiful! I wish we would have gotten peaches this year, but a late frost got them all. I just tried one of my "claussen" pickles that I made last week and they are very good. DH gave his approval stamp, so I'll be makiing as many as I can and checking the garden for more...

    What are you canning now?

I made those Claussen pickles and they smell great, can't wait to try them in a few days! Here they are resting, but the picture doesn't do them justice. I used 1/2 gallons jars since I couldn't find a bigger one. I'm also starting to harvest my dill seed in the garden now, got about 2 cups...
