Its been forever since I've posted here. I'm a canning junkie and since I opened my shop been waaaayyyy to busy to can anything. I finally have things under control now and first off 100lbs of plums! 25 lbs will be going into the steam juicer to make various jellies and the pulp will be used...

Whipped up something new last night.
Raspberry Lemon/Lime Marmalade
4 med. lemons (I used 7 small meyers)
2 small limes
1 1/4 water
1/8 tsp. baking soda
3 cups raspberries
5 cups sugar (use up to 7 cups to sweeten to taste; I used 5 and it is quite tangy)
1 pouch liquid pectin

I just received a 5 gallon bucket of shelled pecans for xmas!!!!!!!!!!!!!!!!!!!!!!! Any one have any praline syrup recipes that don't have corn syrup in them? I'm open to any other suggestions to what to do with them besides pie and cookies.

Well I'm halfway done with making jam/jelly for the up coming holiday craft fairs. Only about 10 more flavors to add and about 500 jars to fill.... and that's not an exaggeration I'll probably sell 700-800 this holiday season.....then rest for 4 months..phew!!! Here's what I got so far...
