    What are you canning now?

If you have a ceramic-top stove you have to get a canner that can be used on that type. It has to do with the shape of the bottom of the pot. Presto 23 quart is what I use....two at a time with no problems.

Quote: You put it on after steam has come out of that valve (strongly) for 10 minutes. After your jars have completed their time in the canner and you turn off the heat, do NOT remove that black knob until the other valve, the one that pops up while the canner is pressurized, drops back down...

    What are you canning now?

Quote: Yes, stack them, there should be some instructions in the teensy-tiny booklet that comes with the gigantic scary canner... I'm in my second year with mine and yes, it terrified me at first. I canned up a batch of black beans to take it for a spin for the first time. That way I...

    What are you canning now?

Some days I want to be more like me....I know that sounds weird, but I have these flurries of productivity....I wish it was more non-stop! The meatloaf recipe was the one from www.canningusa.com but I just mixed chopped onion and diced garlic in with my beef and added some tomato puree from my...

    What are you canning now?

I experimented with using just stevia (the liquid extract) in a jam and it was fantastic! I also used the "no sugar" pectin. It is quite stable with the heating of the canning process, so you can taste it and adjust to taste before canning it.

    What are you canning now?

There is a great recipe on the ss forum for "cream of x soup" for canning. Put farmerlor in the search as the author. I make the cream of mushroom, for all those easy recipes that call for a can of cream of mushroom soup. It is WONDERFUL!!!! No more store-bought cream of chemical soup here...

    What are you canning now?

I have used canned tomatoes to make spaghetti sauce, pizza sauce, and chili and canned my own versions. Much better, IMO, than anything available already made and canned. Even better with home-grown tomatoes, but those are not always available when you want a batch of chili. Canned tomatoes...

    What are you canning now?

If you do a lot of canning and lids are expensive in your area, do an online search and buy a case. I got mine from Fillmore Container last year. They were more expensive than some people here are getting them, but cheaper for my area. I got three cases of cases, so I have lids for a couple...

    What are you canning now?

As usual.......details, please! Do you just cut it in chunks and can it in water? Then use in recipes? Oh, wait, spiral ham....slices for sandwiches? I'm intrigued.....and have empty jars mocking me mercilessly.....

    What are you canning now?

Quote: It should come back, it is early in the season. I'd either move it or put something around it so dh (that d doesn't stand for "dear" right now!! ) doesn't whack it again. Be sure he knows all the good foods he will not be enjoying without rosemary! That often helps with my dh. But...

    What are you canning now?

Quote: My dehydrator quickly became too small for this spring's harvest....and on the sister forum, ss, someone suggested using screens in your vehicle, leave a couple of windows open a bit, and park it on a hot day. I did this just by laying some scraps of tulle (cheap if you don't have...

    What are you canning now?

I waterbath canned for the first time last night, raspberry/pomegranate jam, and it all sealed and jelled! I have done lots and lots of pressure canning, but since we don't eat sweets much and I prefer to freeze strawberries and such, I never waterbath canned. I wanted to make a jam without...

    What are you canning now?

I do a long soak with the beans, 12-24 hours, and make the chili but don't cook it. The beans will cook in the pressure canner. Just allow it to be a little more watery because the beans will soak up some juice. So just follow your recipe, skip the cooking of the beans, just soak 'em. Then...

    What are you canning now?

If freezing is working for you, stick with it! My freezer was getting WAY too full certain times of the year, so I got a....make that two, now.....pressure canners, so I could can things and save freezer space for veggies, which I prefer frozen to canned for most of them. Catfood was taking up...

    What are you canning now?

Quote: May I ask what is your recipe for your cat food? I hate how cat food is fillers like commercial dog food. But my cat has to be on urinary tract cat food so I have limited choices in commercial food. But never know what to make in homemade cat food. Check it out on our sister site...

    What are you canning now?

40.....count 'em, FORTY (my feet hurt!) pints of catfood, so now I don't have to deal with all that meat in the hot weather, I have enough to last until mid-September! And ten quarts of broth are cooling on the stove as well. The last pint went into the freeze and a cup went into me!

Quote: I got some here: http://www.fillmorecontainer.com/Lids/Ball-Regular-Dome-Lids.htm Wal-Mart is always a good bet, but they only carry them "seasonally" here. I factor in the price of my time and gas when I buy such things as well! It is so wonderful to have 3 cases of lids on my...

    What are you canning now?

My Presto 23-quart pressure canner specifically mentions ceramic-top stoves right on the box. I use two of them on my stove with no issues. Be sure to lift when sliding it off the heat, and load it on the burner, not elsewhere, so you don't have to lift it onto the stovetop.

    What are you canning now?

Quote: I first tried them when dh and I went to Georgia in '96 for the Olympics. Kept seeing roadside stands with hand-lettered signs for boiled peanuts. Ew, we said. After the tenth or so that we passed, we pulled over and got some. I ate half, gingerly. Had some more in Florida after my...
