    What are you canning now?

More years ago than I would like to say, when I first started canning as a teenager, I found a recipe for candied cucumber rings. I don' remember much about it except that it was made with cucumbers and cinnamon candies. Ended up being like those red apple slices they used to use as a garnish...

    What are you canning now?

I did the same thing. Planted a pumpkin (never done before) on a whim because everyone said the chickens would love them. I have about 8 great looking pumpkins and a ginormous plant that literally choked out half of my tomatoes, ate my cukes and cabbage and was seriously threatening my...

    What are you canning now?

That's too funny. I kind of figured if they were 'spoiled' I would get sick and die. But what if they just aren't 'good' dill pickles. But you have a point - I'll eat one and see if I die. If I don't I'll ask my neighbor to eat one and tell me if it's any 'good' (tastewise).

    What are you canning now?

Thanks Mickey. I had tried a paper towel, but I was swishing it (well, slowly swishing) through the liquid and it just seemed to be moving it around. I'll try the laying it on top. Altho I haven't been too worried cuz I was getting the major stuff. I suppose that even tho I hate dill...

    What are you canning now?

So, I'm crocking dills for the first time (Deli Dills, previously posted here I think). The instructions are to remove the scum that forms daily. So every day I take a spoon and remove the obvious layer of scum that has formed. But after that, there are teeny tiny pieces of scum that if you...

    What are you canning now?

I'm a BAAAAD girl. I took the day off. Have nothing that's absolutely rotting off the vine. Nothing going bad on the counter (well, maybe a few pears, but my chickens love pears). Actually they love the whole canning season....peelings, cores, seeds, yummy yummy.

    What are you canning now?

Mickey, does this work with most herbs, soft and hard? I've seen about freezing basil in oil, but I was trying to avoid the oil. Freezing in water I like better.

    What are you canning now?

Here's a site I found. http://jimlongsgarden.blogspot.com/2011/09/herb-jelly.html Probably the base is pretty close to the Basil Jelly previously posted here. Liked the fact that he suggested some substitutions of fruit juices. I'm not a fan of all the sugar in jams and jellies, just too...

    What are you canning now?

Finished up my second batch of 14 day sweet pickles (11 pints). Now have 8 pints of glazed carrots in the PC. This is just the second time I've used a PC. Just wish they had a video out to show what they consider 'gentle rocking'. Well, it's rocking, and less than at hi temps, but still a...

    What are you canning now?

Oh, I'm looking to make some almond extract. Can find lotsa sites say soak almonds in Vodka (duh). But only found one site that gave proportions......said equal.......1C blanched, peeled almonds, 1C Vodka. Does this seem like overkill to ya'll? Anyone have experience making this?

    What are you canning now?

I was looking for recipes for canning pears today, and ran into a blog (can't tell you which one) that said that pears are one of the few fruits that ripen better OFF the tree. Said to go ahead and pick them hard and let them ripen after picking. I have no actual knowledge or experience, just...

Rancher, just my experience, I buy my vanilla beans online from Beanilla. I think they were only $1.00 apiece. I bought them to make vanilla extract. Now I have lots left over tho, so gonna do a search to find out if I can freeze the rest.

    What are you canning now?

I don't have 20 lbs, but I just pulled the last of my carrots out of the garden. Had a great crop this year. Made some Carrot Cake Jam last night. One more batch today. To tell you the truth, I'm kinda jammed out. Been canning for myself and for Christmas gifts. Am looking for something to...

    What are you canning now?

Actually, WalMart here stocks it with the table, kosher and sea salts. But this time of year they may be sold out. Mine comes in a rectangular box, rather than the round containers table salt comes in.

Did a search online and found out Walmart has food grade buckets near me. They were only $2.58. Could probably call around and get some for free, but geez, $2.58. I'll take a dozen, please.

So, My crock is cracked, I've used both of my large stainless containers. Has anyone ever brined pickles in one of those plastic buckets, like the Home Depot buckets? Is this safe?

    What are you canning now?

So I don't like dill pickles. But at the request of a friend I am about to make my first Deli Dills. Every recipe I find talks in terms of 'bunches' of dill. I have dill growing in my garden. How much dill is a 'bunch'. Does this include the flowers or do they need to be removed?
