    What are you canning now?

Question for those that have copied all the recipes through the thread. Is there a way we could have a mod just sticky the recipes. I know there is a BYC recipe section. Could they be compiled & put in the recipe section (sorry only visited the recipe section once, not way familiar w it). Any...

Quote: Are you canning dried pintos? Did you grow them? I have canned october beans from my garden, and the tops of my jars didn't have liquid either, but they were still yummy. These were dry store bought beans. With the drought garden produce was limited this yr. next yr I hope to can dry...

7 quarts of pinto beans --- been playing around with the amount of beans. This batch I did 1 cup of beans per quart. My first batch I did 1-1/2 C beans per quart-- they were good. Thought I did the same the next time, but the tops of the jars didn't have any liquid covering the beans. This...

    What are you canning now?

Quote: How do you do your pinto beans? Do you soak them first? And, how full of beans do you fill it before you add water? I'm always worried about the beans soaking up the water in the jar and exploding or something during processing... I did not soak them. I put 1-1/2 cups of beans per jar...

    What are you canning now?

Today I did 7 quarts of pinto beans & 3 quarts of chicken broth. Pinto beans look great but I am a little nervous. Asked DD to put 1/2t of coriander in each jar & she did cayanne pepper instead!!! Teenagers do have selective hearing! Hopefully it won't be too over the top. I will test a jar...

    What are you canning now?

Quote: I exploded my first jar the other day doing pie filling. I think lots of air gets trapped in the space between the apples. I only had ever had one jar do this & was shocked when it happened. Did you use a knife or wand to make sure the air was out the best possible? And the sauce...

Tell us more about the peanuts. I am going to plant a few rows next yr, but planned on roasting them or using them in peanut butter. I considered playing with different flavors of boiled peanuts, but didn't like how time sensitive they would be. Looked @ the canning recipe, sounds easy...

Quote: aren't the better homes and gardens jars made in China though? My better homes and gardens jars are made in china. DH bought them for me I used them all and none of them broke. I did have a Kerr USA jar break though. The lid rings on my better homes jars started rusting after I put...

Went to another walmart & they have rollback signs by the mainstay & better homes garden jars. So should be a nationwide price. BHG pint $7 half pint $6.50. Don't remember the price on quarts. I bought the half pints since I never have enough jelly jars!!!!

    What are you canning now?

Quote: Walmart had their brand quart size jars marked down to $6 for the box of 12. I bought all 9 boxes. Figure I can't buy used jars & replace the seals & rings for that-- or at least not very often. I like the jars because they are a plain round jar -- like miracle whip jars used to be. But...
