I also have the victorio steam canner. It's the only BWB canner I use now. So much faster & safer than a huge pot full of boiling water. I can even stack a 2nd row of half pint jars so I can get 16 jars in one batch. It holds 7 quart jars...
I use avery.com to print my labels. I use a size 2x4 inches for the sides. For the fruit I'm using, I do a google search, or Bing, for strawberry clip art. I like to use drawings / clip-art for the images instead of photos. When I find an image I like, I save it to my computer and then import...
We do the same thing with the funny names. We have a Swamp Pop, and a Watermelon Crawl. I also put funny pictures on the labels for the kind of jam it is. This is the picture that's on our Strawberry Jam:
I have a small stand selling my jams & jellies at a local farmers market. I'm running low on a lot of things so this week is a major jelly making week. So far this week I've made Grape Jelly, Sugar Free Grape Jelly, Cherry Jam, Sugar Free Cherry Jam, Crawfish Jelly and Thai Pepper Jelly. I still...
Going to brag a little bit. I've been using Pomona Pectin in more & more of the jams & jellies I sell at a farmers market. They folks at Pomona are so helpful in helping me convert my recipes to Pomona. In one email to them, I mentioned that I sell my jams & jellies. I got a response asking me...
I sell jams at a farmers market and encourage my customers to return the jars to me. When they've returned 10 jars, they get a free jar of jelly. Not really profitable for me. but it encourages they to buy more.
And family & friends know that if they want more, they have to return the jars!!
I don't eat those really hot peppers - they go into jellies that I sell at the farmers market. I have customers that simply want HOT. I have no intention of even tasting these peppers!!
Your Carolina Reaper that you keep from year-to-year, what do you do with it in the winter. I just noticed...
Picked purple hull field peas yesterday & canned 7 quarts.
My peppers are doing great in the garden this year. I have jalapenos, habaneros, Carolina reapers, naglah red, and a few others. I love those hot peppers! Since I have so much trouble growing bell peppers, I'm trying Gypsy peppers this...
I'm using frozen pineapple chunks that I get from a restaurant supply store. I really don't know if they're precooked or not. But I'll give precooking a try the next time I make some. How long would you suggest I cook them?
Here are all 3 of my doggies, From left to right: Zeva, Sammy, Bo. Sammy & Bo are the ones I cook for, although Zeva does all cleanup of any leftovers. Zeva was my Mom's dog & when she passed, we got her. I was really concerned about how she would interact with the small dogs. She's a pitt bull...
I guess with all the spring planting, no one's had anything to can. But yesterday was a really big canning day for me.
First, I have 2 older little dogs who have had a lot of their teeth removed. Their vet said that instead of giving them canned food, get a high quality dry dog food, and add a...
After doing some research, I found that rhubarb has a hard time thriving with the high temps & humidity in New Orleans. They could be grown as an annual in early spring, but our spring quickly turns into hot summer temps. I think it's not worth the trouble.
This is the time of year that satsumas come in. I've been wanting to try a jelly or marmalade with these delicious citrus, but haven't until this year. I found this recipe for marmalade: http://www.culicurious.com/satsuma-marmalade-recipe/ and the spices looked interesting, so I gave it a try...
Here's a good video that shows the planting process. Because I live in Louisiana with high heat & humidity, it's difficult to keep strawberries from year to year. Too many diseases & insects. I'm not sure about Florida, but your local extension service can help you out.
3goodeggs, I get bare-root strawberries and usually plant them in November, with a harvest in April thru June. The variety is chandler & it grows well in Louisiana. I had to order them from a country town nursery about 4 hours away from New Orleans, but a friend is going to pick them up for me &...
I've got 12 pints of field peas in the canner as I write this. That's the last of the field peas for this year. All the plants have been removed, some fertilizer spread & the ground forked over a little. Next week, strawberries get planted in those beds.
