I'm so far behind with Canning it's insane:/
I have carrots to do plus wanted to can a couple meals (soups and something else). Believe this yr I wanted to try Canning meat finally.
I don't mind either way, I use fruit fresh anyways while I'm cutting and peeling to keep from browning. I've just always been told to use the lemon juice. Only thing that holds the lemon flavor is when use it for peaches. Thanks again
thank you. I read in all my canning books and I spoke with Ball representative lemon juice is required with anything apple made due to acidity, which is needed for Canning to help preserve... that would be great if I didn't need to use it for apples and peaches now:)0
ahh good idea. Should I prepare same way as I always do it? Do I still need lemon juice?
My 80 apple batch made 12 qt jars, I was hoping for 2 more but still was thrilled!!

I don't know about sterilizing in the oven and I surely wouldn't ever sterilize the lids and jars together. I'm interested in finding out how to do this as well. We get jars from our Mennonite farm store, no lids or rings...
lol. Sorry just had to laugh at how ironic it is, you sound just like me. We make a bunch of funKY sounding ones to try on customers and go with it. Husband names them. BP jam: high octane, Rather jam, tornado jam, Sunrise, sunset jams. I'm still known as the jam lady around our county.
