    Over pressure or ( heat two high, wieht rocking too fast), will cause alot of the liquid to boil out of the jar and screw up the headspace. A gentle rocking is all that's needed. It takes 10# of pressure to move the wieght, making it go fast is overheating the goods.

    I walked slowly past the demo, made acouple turns.... things are tight we didn't buy ourselves anything but socks. One too many trips afte4r X-mas and it is ours!! Vitamix. I mean it, this thing is very powerful. I was impressed.

    You start them like tomatos, maybe alittle later. Last year I was at Winco and saw the biggest one I've ever seen so I bought it and sliced it thin and dried it on top of the fridge.     Today was my bumper crop of tomatillos I made 33 pints of green enchilada/salsa for a total of about 50 for the year, and i give some away at X-mas.
