@WthrLady Thank you so much for the reply. I really do appreciate it.
Maybe I will try canning a pint jar or 2 of cabbage to try it. Just be really careful before eating it. Even better, can my soup and make sure to eat it within a couple of weeks. I can't eat a pot of soup be myself in a...
@WthrLady Do you have a reason why you say that? besides some else says not to.
I am trying to find a scientific or researched answer to why you are not supposed to ban cabbage.
@BlueBaby I may try that recipe for canning cabbage- for myself only, not to share with anyone else. If I poison myself, then oops. I love cabbage, DH hates the smell of it cooking so I can only have it when he is not home. This will give me an option to eat cabbage whenever I want.
I am...
Well, since I was the thread killer, I will continue on from my last post.
Didn't get many tomatoes canned. Hope I do better next year. Hubby has been so patient with me - didn't realize how depressed I really was last summer. He says the change in me since getting this job has been...
Finished up the box of peaches tonight. Last jars of slices are in the canner and the last batch of Peach Comfort is in the fridge to can tomorrow.
I use the odd shaped and little pieces that don't go in with the slices to make the peach comfort sauce, so I always have a batch to can at the...
@rancher hicks I think you should be fine. if you are unsure, add a little more lemon juice at the proper time. I believe it is just to make sure that the acidity is high enough for preserving, but I am not positive on that.
@lcertuche Did you soak the beans overnight before canning them? and did you season them at all?
I would like to try canning some beans and see how it goes. They are so good for you, but take so dang long to make from scratch that I almost never make anything with beans besides chili. I...
Does anybody can meat pre-seasoned - like taco meat or bbq?
Or does everyone season it when they are going to use it?
I am thinking of trying some canned pork with Mexican seasoning - a recipe that we recently tried and really liked. The recipe cooks a pork roast and makes way too much meat...
Those look good, very similar to how my canned chicken looked after cooling off. As long as the jars are sealed, everything is good. I had some chicken meat extend above the broth level - I tried to use those up first just incase, but it doesn't seem to make any difference in the eating...
Yes, my plan is to pick the meat off the bones when I go to use it. Getting meat off drumstick is a PITA, so hopefully it will be easiser when canned. I haven't tried it yet, so that is a big hope that it works.
With the boneless skinless breast meat, I put 1 pound of meat per pint jar. Great...
Sorry I can't give you any advice.
When I canned chicken, it was boneless skinless and I canned it in chicken stock. It was fantastic, and I hope to be able to can a bunch this summer. I plan to skin them, then can the dark meat on-the-bone in quart jars with chicken stock. We like white...
Too bad about the predator problems, @Beekissed . Hopefully the predators move on soon.
Not much got canner here this year. I have apples in the fridge that I need to sauce yet, but that seems to be about it. I did can a couple batches of Cherry pie filling. Mom got the luck slice of...
Walmart has their jack-o-lanterns for $1 each ... picked up 5. We wanted to try out the root cellar anyway and the garden did not produce well this year. Chickens will enjoy the pumpkins this winter.
A friend was visiting last weekend and he loves to talk cooking with me. He has come up with a novel idea that want to share with you folks.
He recently acquired a dehydrator and is experimenting with new recipes. His wife made homemade tomato soup for supper one night and after she...
1. When I strain juice through cheese cloth, I use 3 or 4 layers - usually just 3. I only strain it once. I have always been happy with the result from one straining, but I may not be as picky about it being clear as I should. My Sunshine Rhubarb Juice always ends up with a little lemon...
I have canned just apples in apple juice. I bought 100% apple juice from Sam's Club. I peeled, quartered, cut out the core, then cut the quarters into 1/4" thick pieces. They end up less than 1" in size. I put them into water with lemon juice just until I got them all sliced to keep them...
2 years ago, I canned some boneless/skinless chicken breasts from the store in wide mouth pint jars. I put 1 pound of meat in each jar and topped with chicken broth. Most of my recipes call for 1 pound of chicken, so that made the most sence to me and fit nice in the jar. However, there are...
