We just moved to our new mini homestead. I can't get to all of my canning stuff yet but I did make some freezer jam 2 days ago.
4 pints of blackberry and 6 pints of strawberry. I also make fridge pickles with some of those long english cucumbers. Got a good deal on them.
Also skimmed the cream...
today-
13 qts salsa, 10 qts & 1 pint whole tomatoes and 5 pints banana peppers.
man am i tired. i stayed in my kitchen literally all day standing at the counter and stove.
my feet are throbbing. but i will be right back at it again tomorrow.
thx gang. i just brought in a huge amount of veggies from the garden.
i need a good salsa and banana pepper (like for subs) recipe. anyone got one??

i did some green beans tonight and have a question.
this was the first time i have canned green beans and
the water is now below the green beans in some of the
jars. it this ok? will they dry out no being covered? all the
jars sealed up fine though.

got a ton of food to freeze and can at the Amish Auction tonight
onion, green peppers, green apples, cucumbers and a few other things.
what can i do with a bushel of regular cucumbers?? will pickles be good from them? relsih?
today i made and froze 8 peach pies.
it was about 20 lbs of peaches to peel/cut.
it took me 6 hours start to finsh. i was
to tired to really enjoy some tonight...lol.
still got about 25-30 lbs left to can tomorrow.
ok i have a problem and question.
i just got home from church and rushed
into the kitchen to check on my strawberry
rhubarb jam and it is sealed and looks great
BUT it is NOT jelly! it is runny. i dont understand
i followed the recipe to a T. what do i do? can i
recook it and re-waterbath...

Regular and wide-mouth Mason-type, threaded, home-canning jars with self-sealing lids are the best choice. They are available in ½ pint...
i have a question-
can you use/reuse other types of glass jars for canning foods?
like old mayo or spag sauce jars from the store?
if i post a picture of some canning jars i bought can you tell me
if they are just old canning jars (they look different) or store
jars that can/cannot be used? i...
