@DesertChic. It is hard to process some of those older birds that became our favorites. But those sacrifices must be made for the benefit of the breed pens and the pocketbook. Yes, we will eat well this winter.
Past two days, I've butchered the extra roosters and canned the breasts and thighs, froze the legs and wings and made broth from all the bones. Still have one more group to process before moving to the duck pens.
