Well, there's a difference between a hatchery hybrid and a barnyard mix hybrid. The hatcheries churn them out to churn out as many eggs as possible. With the barnyard varieties, they take on the traits from the parents and haven't been selectively bred for high production.
Why not look for a barnyard mix of some breeds you like? Then they will have hybrid vigor so are less likely to have health complications down the line.

they are also softer than most chickens, they have more feathers and they are softer. I LOVE the aussies!
