You don't have to skin it... the skin is delicate, and can tear easily, but it is oh so yummy when cooked just right. It's just easier sometimes to skin it and not worry about all the feathers.
We had a Cornish x Rock that died as a chick, and hubby suggested freezing it for their next trip out in the boat - they soaked the pot overnight and the poor little carcass was picked clean. The shrimp love it. Now any quail or chicks that pass on are kept for bait. And the shrimp up here...

Wonderful way to put the bird to use. Too bad we couldn't use our's for shrimp bait like AK.. I would love to trade my dead birds for yummy yummy shrimp.

LOL! Wish you could, too... just going to have to bring your quail up and fish for shrimpies in person. Nothing gets...
Likewise - I sell the 1-3 wk olds for $3 each, 3-7 week olds are $5, and adults are even more.
We had to put a couple of birds down (chicken chicks and quail) and we found that they make excellent shrimp bait...
Sounds like it's pretty much the same as grouse (spruce hen/prairie chicken). I haven't had the need to do it yet, as I can't seem to keep my quail around. I just sold almost all my 5 week olds, and only have 4 day olds now... I do want to try the pickling, though.
