I have a pot of interesting cuts, including the ones from inside the rib cage,
in a pot of salt water now. Tomorrow night, when my wife isn't home, we
will try a few pieces. I may even try to deep fry a piece. I deep fry pork
chops and OMG are they good.
When ya all say "Gamey" I...

All the roasts are frozen now. I have a pot full of small cuts brining
in the fridge and the neck, backbone, and ribs on ice.
Dang, I gotta go to work.

In CT if you hit it it's yours. I didn't hit it. Someone else did and it ran onto
my property. It made it 50 feet from the road before is crouched down
due to a broken leg. The person who hit it reported it and then drove away.

I'm refraining from calling it roadkill for mental reasons. It wasn't
killed on the road, it just sustained an injury. It was killed by a bullet
in my back yard.
Now that dead possum with the flies and vultures on it we had for
dinner last week was roadkill.

Surprisingly there was no smell at all. I know a deer has scent glands
on the lower legs but I removed those. I also wore rubber gloves and
threw all my clothes in the wash and me in the shower right after I
processed it. It was a young doe too and we don't have corn around
here...
The two backstraps are in the freezer but someone told me the neck
wasn't worth it. The backbone, including the neck, and ribs are still on
ice so I'll look closer tomorrow. Thankfully I still have time to check
out the neck.
You folks all know your deer.
Butchering it was sorta fun. It...
OK, after last night's adventure in gutting and skinning tonight me and
the kid butchered it. We have two HUGE roasts from the back thighs, 2 small roasts from the front, and 2 long roasts from the meat that runs down both sides of the spine all in the freezer. In a pot we have all the
scraps...

You might think that the photos are graphic, but we put photos of chicken processing here all the time. It's been a long time since I have killed and processed a deer, and I, for one, would like to see them. Maybe you could put them in with an update and "graphic pics" warning...

Should I hang it now that it's just a carcus? It's gonna get in the 50's here
today so I'm gonna get it on ice later or will hanging in a 40 degree barn
be ok?
Thanks for the recipe ideas. I'm drooling a little. Deer burgers
sound yummy.

Yuck!!!
PC, I don't know if I would brave eating a deer that I didn't freshly shoot...but that's just me....I also don't order seafood unless I'm in sight of a beach...good luck!!!
The deer was alive when I found it. It's lower back leg was broken.
The poor thing was trying to run...
I'm gonna guess and say the processed part weighs 60 pounds, maybe
more if the pain my back is in means anything.
I've never even tasted venison. It's been an interesting day.
I do have pics of the gutting but don't think I should put them on BYC.
They are graphic.
My "Northern" wife...
Thank you SO MUCH to all of you.
I got through it with the help of my son holding the flashlight and
clicking away with the camera.
It wasn't bad at all.
I took a sharp pocket knife, cut the skin down the abdomen, sliced
open the chest cavity, didn't rupture any internals, sawed the chest...
Ok, I just read the page EggChel referenced and watched a youtube
video Birdboy sent me. I am going to attempt to gut it.
Deep breath.....
Buck-Wild I wish you or PP were here to help.
Another Deep Breath.....
Thanks all. It was just euthanized(shot) 5 minutes before I posted
this. The officer came to my door to tell me we had an injured deer on
the property. I found it then called him over. The doe had both back legs
broken but was very much alive. The officer dispatched the poor
animal with his...
A deer was just struck by a car and ended up on our property. It's
hind legs were destroyed. A local Police Officer Euthanized it and said I
could have it or just leave it and it would be picked up. I actually was
the one to find it.
I swear I knew this was going to happen this year. I'm...
