Do you keep it in a room with a window that is causing it to heat up? Mine fluctuates a small amount but doesn't get that high. Mine hatched early to starting on day 18 and all were healthy with a 66% hatch rate
I wouldn't worry about the humidity just get the temp stable. The humidity should come up when you add eggs. Then I'd leave it stabilize for a good day let the temp come back up and see what the humidity is at then you can judge whether or not you need to add water
